Simple Pancakes Recipe

What is the most easiest thing to make for breakfast?
Well cereal and oats aside of course. Yes, Pancakes! Something kids and big kids and adults love and enjoy!

Here is my take and recipe on pancakes:

Plain flour (2 cups)
Baking soda (1 tsp)
Salt (A pinch to taste)
Eggs (2-3 large eggs)
Milk (1 1/2 cup)
Vanilla Essence (1 tsp)
Melted butter (2 tbsp)

1) Sift the flour into a large mixing bowl, add the baking soda and salt

2) Beat the 3 eggs together

3) Mix the dry ingredients with the egg mixture and whisk 
4) Add in the milk and melted butter
5) Add in vanilla essence and mix well. 

 I picked up an advise somewhere that in order to maintain the fluffiness of the pancake, do not mix until the whole mixture has no clumps, leave some in to trap those pockets of air which will be good for the final product itself. Now the final step is to cook the pancakes on a skillet or a flat pan. Heat up 1 tbsp of oil and pour the mixture in. The magic comes in when pouring the batter in, do not put too much or else the pancake will be thick and take a longer time to cook. I took about 1 min to cook each side till it brown a bit and I take it off to serve on my plate.

You can serve with butter or honey or chocolate sauce or anything you LOVE.
